Fried mushroom and spinach

Ingredients:


  • 16 oz mushrooms

  • 2 garlic cloves, minced

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tsp rosemary

  • 1 tsp oregano

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp crushed red pepper

  • 1 cup chopped spinach

  • 2 tbsp olive oil for frying

  • 1 cup vegetable broth

  • 1/4 cup flour

  • 2 cups quinoa & rice mix

Instructions:

  1. In a medium sauce pan cook quinoa & rice mix according to instructions.

  2. Heat oil in medium frying pan, add mushrooms and cook about 3-4 minutes.

  3. Add minced garlic, stir until fragrant (if you prefer your spinach to be fried now would be the time to add them, if not continue with instructions as is).

  4. Add garlic powder, onion powder, rosemary, oregano, salt, pepper, crushed red pepper.

  5. Add vegetable broth to mushrooms and bring to a simmer.

  6. Add flour and stir until mixture thickens.

  7. Finely chop one cup of spinach and stir into mushroom mixture.

  8. Place mushroom and spinach mixture on top of quinoa & rice, serve.
