New Mexican style Chebureki


Ingredients for dough

  • 4 cups flour

  • 1 teaspoon salt

  • 1 1/2 cups water

  • 4 tablespoons oil


Ingredients for filling

  • 1 lb ground beef

  • 2 small onions finely diced (or 2 tsp union powder

  • 2 tsp salt

  • 1 tsp teaspoon black pepper

  • 2 tsp minced garlic

  • 2 tsp paprika

  • 1 tsp cayenne pepper

  • 1 tsp cumin

  • 1 cup mozzarella cheese

  • oil for frying (I used grape seed)


Instructions:

  1. To prepare the dough, mix water and salt together until dissolved, place the flour, salty water and oil in a bowl.

  2. Mix together to make a dough ball.

  3. Sprinkle more flour on a working surface, continue to knead the dough, adding more flour if necessary until the dough is smooth, elastic and non-tacky.

  4. Flip the bowl over the dough and allow to rest for 30 minutes.

  5. To prepare the meat filling, combine all the ingredients until evenly mixed.

  6. Cook on frying pan until light brown.

  7. Pinch small pieces of dough (about 1/4 cup sized), and roll out thinly. The dough circle should be about 5" to 6" wide.

  8. Place a heaping tablespoon of meat over half of the dough, spreading evenly.

  9. Leave a ½" clean border around the meat.

  10. Fold the dough over the meat, forming a half moon, and press the edges to seal the Chebureki.

  11. Use a fork to press a pattern around the Chebureki.

  12. Heat about ½" oil into a frying pan until hot.

  13. Fry the Chebureki in the hot oil until golden brown on both sides.

  14. Serve immediately with sauce of your choice.
