Ingredients:
6 TBSP softened butter
1 cup sugar
3 eggs
1/2 cup sour cream
1 3/4 cups all purpose flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt (if you used salted butter skip this step)
1 cup maraschino cherries
Glaze:
1 cup granulated sugar
3 tbsp unsweetened almond milk
1/2 tsp butter extract
1/2 tsp rum extract
Instructions:
Preheat oven for 350.
Use mixer to cream together butter and sugar in mixing bowl.
After butter and sugar are well blended add eggs and sour cream, blend together.
Sift dry ingredients into medium bowl.
Pour the bowl of liquid ingredients into the bowl with dry ingredients and blend well.
Take the 1 cup of maraschino cherries and puree them in a blender.
Pour the pureed cherries into mixture and blend until evenly combined.
Pour into well greased baking pan and bake for 55 minutes (give or take 5 minutes, it depends on altitude and oven)
Glaze:
After bread has been taken out of the oven and is cooling prepare the glaze
In small sauce pan, put on medium heat and pour sugar and milk, mix well.
Stir every couple of minutes until it comes to a simmer.
Add in rum and butter extract, stir.
Simmer on low for 10 minutes.
Once mixture begins to thicken, turn off heat and let cool.
Place loaf of bread on parchment paper (wide enough to catch all the glaze that will pour over the edges).
Pour over bread and voila.
