Lemon banana bread

Ingredients:

  • 3 ripe bananas

  • 1/2 cup softened unsalted butter

  • 1 cup sugar

  • 2 tbs lemon zest

  • 1/2 tsp vanilla extract

  • 2 eggs

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

1/4 cup Greek yogurt (I use honey, plain will be fine)


Lemon glaze:

  • 1/2 lemon squeezed

  • 1/4 cup sugar


Directions:

  1. Preheat oven to 350.

  2. In medium bowl smash bananas to your liking (I don't like banana lumps, so I like to smash them and then blend them with a mixer until they are very smooth, almost like pudding).

  3. In mixing bowl pour the sugar then add the lemon zest and use a rubber spatula to rub the mixture together until the sugar turns yellow.

  4. Mix in softened butter until creamy.

  5. Add in eggs and Greek yogurt and mix well.

  6. Sift dry ingredients into the same bowl that the mashed bananas are in, use a mixer to blend the bananas and dry ingredients.

  7. Pour wet ingredients into the medium bowl and use mixer to blend all the ingredients. Stop intermittently and use a rubber spatula to scrape the sides of the bowl.

  8. After everything is well mixed pour mixture into well greased bread pan.

  9. Bake for 50 minutes (give or take 5 minutes, depending on altitude and oven type).


Lemon glaze:

After the bread has been taken out of the oven and is cooling, prepare glaze.

  1. Use a small sauce pan over medium heat.

  2. Pour sugar and lemon juice and stir regularly.

  3. Bring to a simmer, turn the heat to low and simmer for 10 minutes.

  4. Once mixture begins to thicken, turn off heat and allow glaze to cool. Glaze is ready.
