Ingredients:
1 cup white granulated sugar
2 large eggs
1/2 cup softened unsalted butter
1 tsp vanilla extract
1 1/2 cup all-purpose flour
1/2 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp nutmeg
1/2 cup rolled oats
3/4 cup unsweetened applesauce
1/4 cup honey yogurt (unflavored is fine)
Glaze:
1 cup brown sugar
3 tbsp unsweetened almond milk
1 tsp vanilla extract
1 tsp bourbon
Instructions:
Preheat oven for 350.
Use mixer to cream together butter and sugar in mixing bowl.
After butter and sugar are well blended add eggs and blend together.
In the same bowl add vanilla extract and yogurt.
Sift flour, baking powder, baking soda, cinnamon, allspice, and nutmeg in a separate bowl.
Pour the liquid bowl into the bowl with dry ingredients and blend well.
Add applesauce and blend again until all ingredients are well blended.
Fold in rolled oats.
Pour into well greased baking pan and bake for 55 minutes (give or take 5 minutes, it depends on altitude and oven)
Glaze:
After bread has been taken out of the oven and is cooling prepare the glaze
In small sauce pan, put on medium heat and pour sugar and milk, mix well.
Stir every couple of minutes until it comes to a simmer.
Add in bourbon and vanilla extract, stir.
Simmer on low for 10 minutes.
Once mixture begins to thicken, turn off heat and let cool.
Place loaf of bread on parchment paper (wide enough to catch all the glaze that will pour over the edges).
Pour over bread and voila.
