In the midst of quarantining I realize that people may be running out of goods in their home and I want to start a series of recipes that can be made in a variety of ways with the same delicious taste. This post will be listing a variety of ways to bake simple, plain bread.
Oat flour honey bread:
2 1/4 cups oat flour (take regular oats and blend them into a powder)
2 1/4 tsp yeast
1/4 cup butter
2 tbsp honey
2 1/2 tsp baking powder
1/4 tsp baking soda
3/4 cup milk (I used whole, any milk will do)
1 egg
optional: 1/4 cup sour cream or yogurt
Plain white bread:
2 cups all purpose flour
1/2 cup apple sauce (for every egg replace with 1/4 cup apple sauce)
2 tsp baking powder
1/2 tsp baking soda
1/4 cup butter
3/4 cup milk
2 tbsp sugar
optional: 1/4 cup sour cream or yogurt
Chia seed bread:
1 cup all purpose flour
1 1/4 cup oat flour
1 1/2 tsp yeast
1 tbsp chia seeds with 2 1/2 tbsp water (set aside for 5 minutes to thicken); in place of 1 egg
2 tsp baking powder
1/2 tsp baking soda
3/4 cup milk
2 tbsp of sugar or honey
optional: 1/4 cup sour cream or yogurt
NOTE: If you are out of milk you can use water 1:1 ratio, in this case you should add 1 1/2 tsp butter to recipe. Milks most important role in baking is the part it plays in making the batter wet enough for the chemical reactions to take place. In a pinch, water will also work.
Instructions: These instructions apply to all recipes
Preheat oven to 350 degrees.
Blend wet ingredients in medium-sized mixing bowl.
In a separate bowl sift all dry ingredients together.
Combine all ingredients and mix with mixer.
Bake for 55-60 minutes.
